My Favorite Chocolate Cake!


1 Bowl Chocolate Cake


2 cups white sugar
1 3/4 cups all purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 tsp. vanilla extract
1 cup boiling water

  • Preheat oven to 350degrees F(175 degrees C). Grease and flour 9x13 pan.
  • In a large bowl stir together the sugar, flour, cocoa, baking powder, baking soda and salt. Add the eggs, milk,
oil and vanilla, mix for 2 minutes on medium speed of mixer. Stir in the boiling water last. Batter will be thin. Pour evenly into the pans.
  • Bake 25-30 minutes in the preheated oven, until the cakes tests done with a toothpick.
  • Cool in the pans for 10 minutes, then remove to a wire rack to cool completely.
Rich chocolate frosting
Ingredients:
2 (1 ounce) squares unsweetened chocolate ( I used 5 tablespoons of cocoa and 2 tablespoons of butter instead)
1 (14 ounce) can sweetened condensed milk
1 pinch salt

1 tablespoon water
1/2 teaspoon vanilla extract
Directions:
1. In heavy saucepan, over medium heat, melt chocolate with sweetened condensed milk and salt. Cook and stir until it thickens, about 10 minutes.
2. Remove from heat. Stir in water; cool. Stir in vanilla. Store at room temperature.
