My Monday Menu Plan



Monday:  Nachos (corn tortillas, with beans, salsa, sour cream and cheese)

Tuesday:  Penne a la Betsy

Wednesday:  Eating out at the local market.  Thai!

Thursday:  Baked lemon pepper fish, wild rice, steamed corn from the market.

Friday:  New Years Eve...probably pizza!

Saturday:  New Year's Day...nothing else but Black eyed peas, cornbread and fried okra!

Pearl's Sugar Cookies

My mom had this customer who had the most amazing sugar cookie recipe.  Pearl has since gone on to be with our Jesus, but her sugar cookie recipe lives on in our family.  It has been awhile since I made these but lately have been craving them.  These are so yummy. 
Let me warn you...you can't eat just one. 

 
PEARL’S SUGAR COOKIE
 
1 ½   yellow butter flavor Crisco
1 ½   cups sugar
2      eggs
 1 tsp.  soda
 1 tsp. cream of tarter
 1  tsp. vanilla
Beat until turns white……add 4 cups sifted flour and 1 cup milk.  Beat a lot. Grease and flour cookie sheets and drop by tablespoons….not to close.
Sprinkle with sugar.
 Bake top shelf 375 degrees until light brown around edges, about 10 min. or less. Cool on dish towel or paper towels.

Cinnamon Toast Cake

I love traditions.  

I love thinking back on traditions our family had growing up.  I just recently described for my children the tradition we had when we went out to buy a Christmas tree every year. How we always went to Pizza Hut (if I remember correctly, this was the only time we ever went there) and then we would go to the nursery on Andrews Hwy in Odessa.  We would search and search for the perfect real tree and would usually end up at the first one we started with.

Sunday mornings we always had pancakes.  Even to this day when we visit and if it happens to be on a Sunday we get pancakes.   

I love traditions and want traditions to be something my children look back on with great joy.  
I made this wonderful breakfast cake last weekend and it was delicious!  

I think this will be a new Saturday morning tradition for us.

My Monday Menu Plan

Monday:  Breakfast casserole with biscuits and fresh fruit and veggies.

Tuesday:  Chick-fil-a Sandwiches

Wednesday:  Bean burritos/salad on the side

Thursday:  Quesadillas with all the leftovers

Friday:  Little Man is having a birthday sleepover so it will probably be pizza!

Saturday:  Little Man is turning 8!!!  We plan to go out to eat breakfast and he gets to choose where he wants to eat for lunch.

Quesadilla Bar

The other day I had my house helper make us some tortillas and I prepared all the fixings for quesadillas. I let the kids make their own and they loved it. We even had enough for another meal of this. Some of the fixings were cheese, mushrooms, onions, chicken, and pineapples. They were yummy!

What's for Dinner


I cook dinner from scratch today! We had bean burritos with cheese and fresh tomatoes. I cooked the beans forever and then smashed them. I made the tortillas, although they were funny shaped they tasted delicious. I am sure with practice they will come out round. I am so excited we can get cheese here and it didn't cost $10 for a small block! The tomatoes were delicious, tasted just like they were from the garden. I did have to soak them in some purple solution to strip the pesticides off and kill any bad germs on them. I think tomorrow we will have curried eggs with some vegetable and rice with gravy. Hopefully it will turn out!
